NEW ZEALAND MĀNUKA HONEY
Mānuka flowers for four to six weeks. That is the entire window, and it opens at different times as you move down the country, so everything depends on the hives being in the right place at the right few weeks.
Ours comes from the top of the North Island: Northland, Auckland, Waikato and the Coromandel, and from further afield in a poor season. The beekeepers behind it have been producing mānuka since 1965, back when most of the industry did not want it. Too dark, too thick, too hard to get out of the frame.
That is the honey we put in the can.
